An air fryer is a small convection oven with a strong fan, so food cooks hotter and faster than the oven numbers on the package suggest. The conversion that works for almost everything: lower the temperature a step and shorten the time by a fifth.
Good to know
Every air fryer basket and batch size behaves differently. The first time you convert a recipe, check a few minutes before the calculated time and note what worked for next time.
The fan needs air flow to crisp. One layer with space beats two stacked layers, even if it means cooking in batches. Shake or flip halfway for even browning.
Wet batters, delicate fish, and anything that rises (cakes, soufflés) do better in a regular oven. The air fryer shines with fries, vegetables, chicken pieces, and reheating anything breaded.
