A couple of sweet potatoes sitting on the counter is more of a meal than it looks. 2. Loaded Baked Sweet Potato

Prick a whole one, bake at 200C for 45 minutes until soft, then split and pile it high. Black beans, a spoon of yogurt, cheese, and hot sauce make it dinner. It is the laziest full meal on this list.

3. Quick Mash

Cube and boil or microwave until tender, then mash with butter, salt, and a pinch of cinnamon or chili. Faster and sweeter than regular mash, and a soft landing under sausages, chicken, or a fried egg.

4. Sweet Potato and Egg Hash

Dice small, fry in a hot pan until browned and tender, push to one side, and crack in eggs. A ten-minute breakfast, lunch, or lazy dinner that uses one pan and whatever herbs or greens you have.
