Bulk Breakfast Burrito, 780 kcal of Fuel
Bulking on cereal is a rookie mistake. One burrito, three eggs, crispy potatoes and beans gets you 780 kcal and 40 grams of protein before 9 am, and it wraps to go.
You need
- 1 nonstick pan
- 1 spatula
- 1 sharp knife
Ingredients
For 1 serving
- 1 large (XL / burrito size) flour tortilla (about 80 g)
- 3 eggs
- 120 g (1 medium) potato, diced small
- 30 g (1/3 cup) cheddar, grated
- 60 g (1/3 cup) black beans, drained
- 2 tbsp salsa
- 2 tsp olive oil
- 1/2 tsp smoked paprika
- to taste salt + black pepper
How to cook
Start the potatoes first: heat the oil over medium-high, add the diced potato with paprika and salt, and let them sit 2 minutes before the first stir.
Crispy potatoes come from patience, not stirring. Every flip resets the crust timer.
Fry 10 to 12 minutes, stirring every few minutes, until golden and crisp. Push to one side of the pan.
Warm the black beans in the empty half of the pan, about 1 minute, then move everything to a plate.
Drop the heat to medium-low. Beat the eggs with a pinch of salt and scramble them slowly until just set and glossy.
Pull them while they still look slightly wet. They finish cooking inside the wrap.
Warm the tortilla 15 seconds per side in the pan so it folds without cracking.
Layer down the center: cheddar first, then hot eggs so it melts, potatoes, beans, salsa. Fold in the sides, roll tight.
Seam side down in the hot pan for 1 minute until sealed and toasted. Halve and eat, or wrap in foil for the road.
