Lean Bulk Pork Noodle Stir-Fry
Pork loin is the cheapest lean protein most people walk straight past. With noodles and a hot wok it turns into the easiest 750-calorie plate on a bulk.
You need
- 1 wok or large frying pan
- 1 saucepan
- 1 knife and board
Ingredients
For 2 servings
- 350 g (12.3 oz) pork loin, sliced thin against the grain
- 200 g (7 oz) egg noodles, dry
- 2 heads pak choi, leaves separated
- 1 red pepper, sliced
- 1 carrot, cut into matchsticks
- 1.5 tbsp vegetable oil
- 2 tbsp hoisin sauce
- 2 tbsp soy sauce
- 3 cloves garlic, sliced
- 1 tbsp fresh ginger, grated
- 1 tsp sesame seeds
How to cook
Cook the noodles one minute short of the packet time, drain, and rinse under cold water so they stop cooking.
Undercooked and rinsed is right. They finish in the wok and would otherwise turn to paste.
Pat the pork dry and season it. Getting the surface dry is what lets it brown instead of steam.
Heat the wok until it is almost smoking, add half the oil, then sear the pork in a single layer for 2 minutes without touching it.
If your wok is not big enough for a single layer, do it in two batches. This is the one step worth the extra pan.
Toss the pork for another minute, then lift it out onto a plate while you do the vegetables.
Add the rest of the oil, then the carrot and pepper for 2 minutes, then the garlic, ginger and pak choi stalks for 1 minute more.
Return the pork with the noodles, hoisin and soy, and toss everything hard over high heat for 2 minutes until glossy and coated.
Fold through the pak choi leaves until they just wilt, then finish with sesame seeds.
