Peanut Butter Oat Energy Bites for Meal Prep
Twenty bites, one bowl, no oven. A portion is two bites, not the whole box, and it is the snack that stops the 4 pm vending machine run.
You need
- 1 mixing bowl
- 1 sturdy spoon or spatula
- 1 plate or small tray
- small boxes or bags for 10 portions
Ingredients
For 10 servings
- 120 g (1 1/3 cups) rolled oats
- 130 g (1/2 cup) smooth peanut butter (just peanuts)
- 80 g (1/4 cup) honey
- 50 g (1/3 cup) dark chocolate chips
- 30 g (1/4 cup) ground flaxseed
- 1 tsp vanilla extract
- pinch salt
How to cook
Stir the peanut butter, honey, vanilla and salt together in the bowl until smooth and glossy.
If your peanut butter is stiff from the fridge, warm it for 15 seconds first, then let the mix cool before the chocolate goes in.
Add the oats and ground flaxseed and stir until there are no dry oats left at the bottom of the bowl.
Fold in the chocolate chips.
Chill the bowl for 20 minutes so the mix firms up and stops sticking to your hands.
Skip this and you are rolling glue. Twenty minutes is enough.
Roll the mix into 20 balls about the size of a walnut, roughly 20 g each, squeezing each one firmly before you roll it.
Squeeze first, then roll. Packed tight, they hold together in a bag; rolled loosely, they crumble. If the mix is too dry to hold, work in a teaspoon of water.
Pack 2 bites per portion into small boxes or bags and keep them in the fridge.
Keeps 7 days in the fridge in a closed box. To freeze, set them on a tray in the freezer first, then bag them for up to 3 months. Eat cold straight from the fridge; frozen ones need about 10 minutes on the counter.
Why it fits a build muscle goal
- Two bites add 190 kcal between meals, which is where a surplus is easiest to find when bigger plates feel like a chore.
- Honest about protein: 6g a portion. These are an energy snack, not a protein bar, so pair them with a glass of milk or a yogurt when you want more.
- One bowl, no oven, ten portions: roll them while the rest of your prep is in the oven.
